Quinoa rolls

Ingredients

for 4 person

Quinoa
250 g quinoa (e.g. red)
2 tbsp miso paste
6 dl salted water
Rolls
nori sheet
avocado, sliced
½  mango, sliced
30 g Micro Greens

How it's done

Quinoa

Mix the quinoa with 1 tbsp of miso paste, bring to the boil with the water in a pan. Cook over a medium heat (uncovered) for approx. 20 mins., stirring occasionally. Leave to cool for approx. 15 mins., mix in the remainder of the miso paste.

Rolls

Place one nori sheet on a bamboo mat or piece of cling film. Spread ¼ of the quinoa on the nori sheet, leaving a gap of approx. 3 cm at the top. Arrange ¼ of the avocado, mango and micro greens lengthwise in the centre of the quinoa, roll up the nori sheet and roll between your hands until everything holds together. Repeat this process two more times. Slice the rolls into 6 equal pieces using a very sharp, wet knife.
