Cinque Pi
Ingredients
for 4 person
| 350 g | pasta (e.g. penne) |
| salted water, boiling |
| 3 dl | single cream |
| 3 tbsp | tomato puree |
| 1 | garlic clove, squeezed |
| ½ tsp | salt |
| a little | pepper |
| 50 g | grated Parmesan |
| 2 tbsp | flat-leaf parsley, finely chopped |
| 250 g | cherry tomatoes, quartered |
How it's done
Pasta
Cook the penne in salted water until al dente, drain.
Sauce
In a pan, bring the cream, tomato puree and garlic to the boil. Reduce the heat, simmer for approx. 5 mins., season. Stir in the cheese and parsley, add the tomatoes, simmer for a further 5 mins. Add the penne, mix and heat gently.
