Winter salad with cottage cheese and pears
Ingredients
for 4 person
| 2 tsp | coarse-grain mustard |
| 4 tbsp | rapeseed oil |
| 3 tbsp | white balsamic vinegar |
| 1 tsp | liquid honey |
| salt and pepper to taste |
| 1 tin | pear halves (230 g), drained |
| 200 g | plain cottage cheese plain, (Hirz) |
| 30 g | walnut kernels, toasted, coarsely chopped |
| ½ bunch | chives, finely chopped |
| 2 | white chicory, whole leaves |
| 2 | red chicory (e.g. Trevisano), whole leaves |
How it's done
Sauce
Mix all the ingredients together well, season.
Lettuce
Cut two pear halves lengthways into slices, set aside. Chop the remaining pears into cubes, mix with the nuts, chives and cottage cheese. Stir in half of the salad dressing.
Place the chicory leaves and pear slices around the edge of the plate and drizzle over the remaining salad dressing. Serve the cottage cheese in the middle.
