Almond biscuits
Ingredients
for 40 pieces
400 g | shelled ground almonds |
250 g | finest sugar |
2 | organic lemons, use grated zest only |
2 | egg whites |
6 drop | bitter almond extract |
¼ tsp | salt |
50 g | icing sugar |
How it's done
Almond paste
In a food processor, grind the almonds even more finely, place in a bowl and add the sugar and all the ingredients up to and including salt, knead to a dough.
Shape
Scatter icing sugar over the work surface. Shape the mixture into a roll (approx. 3½ cm in diameter), cut into pieces approx. 3 cm long. Using three fingers, press inwards along the sides and place on a baking tray lined with baking paper.
Bake
For approx. 15 mins. in the centre of an oven preheated to 150°C. Remove and allow the almond biscuits to cool on the tray.
