Salmon with mango salsa
Ingredients
for 4 person
½ tbsp | olive oil |
1 tbsp | coarse-grain mustard |
1 tbsp | honey |
800 g | salmon fillets without skin, grey layer of fat removed |
¾ tsp | salt |
a little | pepper |
1 litre | vegetable bouillon |
250 g | wild rice mix |
1 | lime, rinsed with hot water, dabbed dry, use grated zest and juice |
1 | mango, diced |
½ bunch | coriander, leaves torn off |
1 | red chilli pepper, deseeded, cut into rings |
½ tbsp | coarse-grain mustard |
½ | lime, use only the juice |
¼ tsp | salt |
How it's done
Salmon
Combine the oil, mustard and honey. Place the salmon on a baking tray lined with baking paper, season and brush with the dressing.
To cook
Approx. 1 hr. in the centre of an oven preheated to 80°C.
Wild rice
Bring the stock to the boil, add the rice, cook until just soft, drain, stir in the lime zest and juice, keep warm.
Salsa
Mix the mango with all the other ingredients, serve with the salmon and rice.
