Salmon tartare with apple salad

Ingredients

for 4 person

Salmon tartare
300 g smoked salmon, cut into slices, finely diced
shallots, finely chopped
2 tbsp lime juice
2 tbsp white vermouth
1 tbsp capers, roughly chopped
½ bunch dill, finely chopped
  pepper, to taste
Apple salad
red-skinned apples, halved, cores removed, cut into slices
1 tbsp white balsamic vinegar
1 tbsp rapeseed oil
  salt and pepper to taste
20 g hazelnuts, toasted, coarsely chopped

How it's done

Salmon tartare

Carefully mix together all of the ingredients, refrigerate until ready to serve.

Apple salad

Mix the apple slices immediately with the balsamic and oil, season.

To serve, plate up the tartare and apple salad, sprinkle with the hazelnuts, garnish with dill as desired.
