Salmon tartare with apple salad
Ingredients
for 4 person
300 g | smoked salmon, cut into slices, finely diced |
2 | shallots, finely chopped |
2 tbsp | lime juice |
2 tbsp | white vermouth |
1 tbsp | capers, roughly chopped |
½ bunch | dill, finely chopped |
pepper, to taste |
2 | red-skinned apples, halved, cores removed, cut into slices |
1 tbsp | white balsamic vinegar |
1 tbsp | rapeseed oil |
salt and pepper to taste | |
20 g | hazelnuts, toasted, coarsely chopped |
How it's done
Salmon tartare
Carefully mix together all of the ingredients, refrigerate until ready to serve.
Apple salad
Mix the apple slices immediately with the balsamic and oil, season.
To serve, plate up the tartare and apple salad, sprinkle with the hazelnuts, garnish with dill as desired.
