Carrot and celeriac fries
Ingredients
for 4 person
| 1 tbsp | Maizena cornflour |
| 1 tsp | salt |
| ¼ tsp | cayenne pepper |
| 1 | celeriac (approx. 500 g), chipped |
| 6 | carrots, cut into six lengthways and then in half |
| 1 tbsp | olive oil |
| 2 tbsp | Chimichurri sauce |
| 1 tbsp | mayonnaise |
| 50 g | crème fraîche |
| salt and pepper to taste |
How it's done
Vegetables
Mix the Maizena, salt and cayenne pepper in a freezer bag. Add the celeriac and carrots, shake well, place onto a baking tray lined with baking paper, drizzle with oil.
To bake
Approx. 45 mins. in the lower half of an oven preheated to 220°C.
Dip
Mix the chimichurri sauce, mayonnaise and crème fraîche, season.
