Baked vanilla pears

On many occasions I've put a lot of effort into a dessert only to have lots of it left over because the main course was too filling. This shouldn't be a problem with this pear dessert.

Ingredients

for 2 person

1 tbsp coconut palm sugar
vanilla pod, cut open lengthwise, seeds scraped out
1 tbsp maple syrup
1 tsp coconut oil, liquid
pears (small and ripe), halved, core removed
2 tbsp chopped pistachios
50 g dark chocolate, crumbled

How it's done

Mix together the coconut palm sugar, vanilla seeds, maple syrup and coconut oil to form a paste. Glaze the cut sides of the pears with the paste, place the pears in an ovenproof dish, add the scraped-out vanilla pods.

Bake for approx. 30 mins. in the centre of an oven preheated to 180°C.

Put the chocolate into a small bowl and melt over a hot bain-marie. Decorate the pears with the liquid chocolate.
