Lime & quinoa salad

Ingredients

for 2 person

Quinoa
1 tbsp olive oil
150 g quinoa
3 dl water
¼ tsp salt
Salad
lime, rinsed with hot water, dabbed dry, use grated zest and juice
3 tbsp olive oil
  salt and pepper to taste
1 tin azuki beans adzuki beans, rinsed and drained
½ bunch coriander, roughly chopped

How it's done

Quinoa

Heat the oil in a pan, add the quinoa and sauté briefly. Pour in the water, season with salt, bring to the boil, cover and simmer on a low heat for approx. 15 mins. until almost soft, allow to cool slightly.

Salad

Combine the lime zest and juice with the oil, season. Add the quinoa, beans and coriander, mix.
