Lime & quinoa salad
Ingredients
for 2 person
1 tbsp | olive oil |
150 g | quinoa |
3 dl | water |
¼ tsp | salt |
1 | lime, rinsed with hot water, dabbed dry, use grated zest and juice |
3 tbsp | olive oil |
salt and pepper to taste | |
1 tin | azuki beans adzuki beans, rinsed and drained |
½ bunch | coriander, roughly chopped |
How it's done
Quinoa
Heat the oil in a pan, add the quinoa and sauté briefly. Pour in the water, season with salt, bring to the boil, cover and simmer on a low heat for approx. 15 mins. until almost soft, allow to cool slightly.
Salad
Combine the lime zest and juice with the oil, season. Add the quinoa, beans and coriander, mix.
