Quick vegetable pasta
Ingredients
for 4 person
| 500 g | pasta (e.g. orecchiette) |
| salted water, boiling | |
| 1 | cauliflower (small), cut into florets |
| 1 | broccoli (small), cut into florets |
| 2 | garlic cloves |
| 200 g | diced bacon or strips of bacon |
| 1 tbsp | olive oil |
| 1 handful | pine nuts, roasted without oil |
| salt and pepper to taste |
How it's done
Cook the pasta in salted water according to the packet instructions until al dente. Add the cauliflower and broccoli 6 mins. before the end of the cooking time. Drain both.
In a wide-bottomed, non-stick frying pan, fry the garlic and bacon in the oil until crispy. Stir in the pasta, vegetables and pine nuts, season and serve immediately.
