Quick vegetable pasta

A simple plate of pasta - but with an added dose of vitamins. Perfect when you're short of time but still want to eat something tasty and healthy.

Ingredients

for 4 person

500 g pasta (e.g. orecchiette)
  salted water, boiling
cauliflower (small), cut into florets
broccoli (small), cut into florets
garlic cloves
200 g diced bacon or strips of bacon
1 tbsp olive oil
1 handful pine nuts, roasted without oil
  salt and pepper to taste

How it's done

Cook the pasta in salted water according to the packet instructions until al dente. Add the cauliflower and broccoli 6 mins. before the end of the cooking time. Drain both.

In a wide-bottomed, non-stick frying pan, fry the garlic and bacon in the oil until crispy. Stir in the pasta, vegetables and pine nuts, season and serve immediately.
