Ingredients

for 2 person

Roasted vegetables
120 g chickpeas (e.g. Karma organic chickpeas)
courgette, sliced
1 ½ tbsp Dukkah (spice mix)
2 tsp maple syrup
To serve
50 g dried tomatoes
150 g Karma Hummus mit Zitrone und Petersilie
90 g rocket
Dressing
150 g Karma Organic Plain Coconut Base
1 tbsp peppermint, finely chopped
1 tbsp apple vinegar
½ tbsp Dukkah (spice mix)

How it's done

Roasted vegetables

Mix all the ingredients in a bowl, spread on a baking tray lined with baking paper. Roast for approx. 30 mins. in the centre of an oven preheated to 200°C. Allow to cool slightly.

To serve

Plate up the roasted vegetables. Top with the tomatoes and all the other ingredients up to and including the rocket.

Dressing

In a bowl, mix the coconut yoghurt with all the other ingredients up to and including the dukkah, drizzle on top of the salad.
