Mezze salad
Ingredients
for 2 person
| 120 g | chickpeas (e.g. Karma organic chickpeas) |
| 1 | courgette, sliced |
| 1 ½ tbsp | Dukkah (spice mix) |
| 2 tsp | maple syrup |
| 50 g | dried tomatoes |
| 150 g | Karma Hummus mit Zitrone und Petersilie |
| 90 g | rocket |
| 150 g | Karma Organic Plain Coconut Base |
| 1 tbsp | peppermint, finely chopped |
| 1 tbsp | apple vinegar |
| ½ tbsp | Dukkah (spice mix) |
How it's done
Roasted vegetables
Mix all the ingredients in a bowl, spread on a baking tray lined with baking paper. Roast for approx. 30 mins. in the centre of an oven preheated to 200°C. Allow to cool slightly.
To serve
Plate up the roasted vegetables. Top with the tomatoes and all the other ingredients up to and including the rocket.
Dressing
In a bowl, mix the coconut yoghurt with all the other ingredients up to and including the dukkah, drizzle on top of the salad.
