fresh eggs
To fry the eggs
a little  clarified butter
  salt and pepper to taste

How it's done

To crack open the eggs

Crack open an egg on the edge of a thin bowl or cup. Using the tips of your thumbs, pull the two halves apart and carefully slide the egg into a bowl.

To fry the eggs

Heat the clarified butter in a non-stick frying pan. Slide the eggs carefully into the frying pan one at a time, then fry over a low heat until the egg whites are set but the yolks are still runny, season.
