Port-poached pears

Ingredients

for 4 person

3 dl light port
2 dl water
100 g cane sugar
cinnamon stick
star anise
½  grapefruit, rinsed with hot water, dabbed dry; use peeled zest only
pears, peeled

How it's done

Bring the port and water to the boil along with all the other ingredients up to and including the grapefruit zest. Add the pears, reduce the heat, cover and simmer for approx. 10 mins. until just soft. Remove the pears, reduce the poaching liquid to a syrupy consistency for approx. 30 mins. Drizzle the liquid over the pears. Serve lukewarm.
