Pasta salad with chicken
Ingredients
for 4 person
1 | lemon, use only the juice |
½ dl | apple juice |
150 g | celeriac, cut into small pieces |
1 | apple, peeled, cut into small pieces |
150 g | plain greek yoghurt plain |
1 tsp | mild curry powder |
salt and pepper to taste |
oil for frying | |
2 | chicken breasts, diced |
¼ tsp | salt |
a little | pepper |
300 g | pasta (e.g. wholegrain farfalle) |
salted water, boiling | |
200 g | celery, cut into pieces |
1 | red-skinned apple, cut into sticks |
How it's done
Celeriac & apple sauce
Bring the lemon juice and apple juice to the boil, add the celeriac and apple, cover and simmer for approx. 1 min. until soft. Leave to cool, puree, stir in the yoghurt, season the sauce.
Chicken
Heat the oil in a frying pan, fry the chicken all over for approx. 5 mins., leave to cool, then season.
Pasta salad
Cook the pasta in salted water until al dente, drain and rinse in cold water. Mix the pasta with the celery, apple, chicken and sauce.
