Pasta salad with chicken

Ingredients

for 4 person

Celeriac & apple sauce
lemon, use only the juice
½ dl apple juice
150 g celeriac, cut into small pieces
apple, peeled, cut into small pieces
150 g plain greek yoghurt plain
1 tsp mild curry powder
  salt and pepper to taste
Chicken
  oil for frying
chicken breasts, diced
¼ tsp salt
a little  pepper
Pasta salad
300 g pasta (e.g. wholegrain farfalle)
  salted water, boiling
200 g celery, cut into pieces
red-skinned apple, cut into sticks

How it's done

Celeriac & apple sauce

Bring the lemon juice and apple juice to the boil, add the celeriac and apple, cover and simmer for approx. 1 min. until soft. Leave to cool, puree, stir in the yoghurt, season the sauce.

Chicken

Heat the oil in a frying pan, fry the chicken all over for approx. 5 mins., leave to cool, then season.

Pasta salad

Cook the pasta in salted water until al dente, drain and rinse in cold water. Mix the pasta with the celery, apple, chicken and sauce.
