Freshwater prawns with winter salsa
Ingredients
for 4 person
| 1 tbsp | olive oil |
| 1 | garlic clove, finely chopped |
| 200 g | leek, cut into approx. 3 mm strips |
| 1 tin | chopped tomatoes (approx. 400 g) |
| ½ tsp | salt |
| a little | pepper |
| 2 tbsp | pine nuts, roasted, roughly chopped |
| oil, for frying | |
| 4 | Fine Food shrimp tails, Easy-Peel |
| 2 sprig | rosemary |
| ¾ tsp | sea salt |
How it's done
Salsa
Heat the oil in a pan, sauté the garlic and leek for approx. 5 mins., add the tomatoes, bring to the boil, reduce the heat, simmer for approx. 25 mins., season, mix in the pine nuts.
Prawns
Heat the oil in a non-stick frying pan, add the rosemary. Fry the prawn tails for approx. 6 mins. all over, add salt and serve with the winter salsa.
