Delicious ice lollies are wonderfully refreshing in hot weather. These frozen desserts are incredibly creamy and full of healthy ingredients such as fresh fruit and coconut milk. For me, there's nothing better than creating an abundance of flavours from natural ingredients. I refrain from buying industrial products that contain vast quantities of artificial flavours and sugar. Instead, I prefer to make my own ice lollies using sweet raspberries that are in season right now. You'll love this recipe, too – I promise! As these ice lollies only take ten minutes to prepare, you can make them quickly and easily the night before and enjoy them on a hot summer's day!

Ingredients
for 6 pieces
Ice lollies

banana, ripe |
| 80 g |
raspberries |
| 2 ½ dl |
coconut milk |
| 2 tbsp |
maple syrup |
Toppings
| 30 g |
dark chocolate |
| 2 tsp |
coconut flake |
| 2 tsp |
raspberry crumble, dried, roughly chopped |
| 2 tsp |
pistachios, coarsely chopped |
How it's done
Ice lollies
Place all the ingredients in a food processor or blender and puree until smooth. Pour the mixture into the ice lolly moulds, freeze for approx. 4 hrs.
Toppings
Briefly dip the lollies in hot water to remove them from the moulds. Melt the chocolate in a bain-marie, drizzle over the ice lollies. Decorate with the coconut flakes, raspberries and pistachios.
