Fruit in curry sauce
Ingredients
for 4 person
| 300 g | long grain rice |
| salted water, boiling |
| a little | oil, for frying |
| 750 g | coloured peppers, cut into strips |
| 300 g | pineapples, cut into pieces |
| 2 | apples, cut into pieces |
| 2 tbsp | curry powder |
| 7 ½ dl | coconut milk |
| ¾ tsp | salt |
| a little | pepper |
How it's done
Rice
Cook the rice in salted water until almost soft. Drain the rice, cover and keep warm.
Curry
Heat the oil in a non-stick frying pan. Stir fry the pepper, pineapple and apple for approx. 2 mins., add the curry and stir fry for approx. 1 min. Pour in the coconut milk, bring to the boil while stirring, reduce the heat and simmer for approx. 5 mins., season.
