Lamington bites are a popular treat in Australia. They are made from squares of vanilla & coconut sponge cake coated in a layer of chocolate and rolled in dessicated coconut. My Lamington bites were inspired by the Australian classic. However, thanks to the healthy ingredients, mine are intended more as a delicious healthy snack than a pudding. Of course, they can also be enjoyed as a healthy dessert.

Ingredients

for 9 pieces

Lamington mixture
100 g pitted date
50 g rolled oats
½ tsp bourbon vanilla powder
25 g coconut oil
50 g coconut flakes
Coating
50 g dark chocolate
50 g coconut flakes

How it's done

Lamington mixture

Puree all of the ingredients in a food processor or blender to form a dough-like mass. Shape the mixture into a square (approx. 1 cm thick), wrap in cling film and place in the freezer for approx. 30 mins.

Coating

Remove the mixture from the freezer and cut into 9 equal squares. Melt the chocolate in a bain-marie. Dip the squares into the chocolate one at a time, then toss them in the coconut flakes. Allow to dry on a rack.
