Couscous with mince and squash ragout
Ingredients
for 2 person
| 1 tbsp | oil for frying |
| 300 g | minced meat (beef) |
| 200 g | squash, diced |
| ½ tsp | salt |
| 1 ½ tbsp | Dukkah (spice mix) |
| 2 dl | water |
| 90 g | couscous |
| 1 ½ dl | salted water, boiling |
How it's done
Mince and squash ragout
Heat the oil in a frying pan. Stir fry the meat for approx. 2 mins., add the squash and stir fry for a further 4 mins., season. Pour in the water, cover and simmer for approx. 5 mins.
Couscous
Place the couscous in a bowl, pour in the salted water, cover and leave to absorb for approx. 5 mins. Separate the couscous with a fork, serve with the mince and squash ragout.
