This summer, the popular, brightly coloured treat from our childhood is trendier than ever. Make way for the popsicle! Here in Switzerland, the ice cream van doesn't do the rounds like it does in the USA, but who needs an ice cream van when it's so easy to make your own – in just about every flavour and colour under the sun! You can design your own – with colourful pieces of fruit or summer berries, gummi bears, trendy ingredients such as cucumber, avocado or kale, or as an ice-cold, energy-boosting smoothie, or even laced with vodka. Ice lollies with style!

Ingredients

for 10 pieces

Fruit mixtures
100 g blueberries
100 g blackberries
100 g raspberries
100 g strawberries
4 tbsp water
100 g icing sugar
1 dl coconut milk

How it's done

Fruit mixtures

Puree the different types of berries separately with 1 tbsp of water each.

Pass each mixture through a fine sieve.

Mix one quarter of the icing sugar with each of the berry mixtures.

Mix half of the strawberry mixture with the coconut milk.

To fill

Transfer the first berry mixture to the ice lolly moulds.

Insert the ice lolly sticks, freeze for approx. 20 mins.

Repeat the process with the remaining berry mixtures. Freeze the ice lollies for approx. 4 hrs.
