Salmon roesti medallions
Ingredients
for 4 person
| ½ tbsp | olive oil |
| 150 g | baby spinach |
| 500 g | Betty Bossi Rösti fixfertig |
| 200 g | salmon fillet, finely chopped |
| 2 | egg |
| 2 tbsp | white flour |
| ½ tsp | salt |
| a little | pepper |
| 2 tbsp | olive oil |
How it's done
Spinach
Heat the oil in a large pan, add the spinach and wilt over a medium heat. Drain the spinach, cut finely, add to a bowl.
Medallions
Mix the roesti and add all ingredients up to and including the pepper to the spinach, mix well.
To fry
Heat the oil in a non-stick frying pan. Add portions of approx. 2 tbsp, reduce the heat, fry the medallions for approx. 4 mins. on each side over a medium heat.
