Black sesame ice cream

Ingredients

for 5 dl

Sesame seeds
5 tbsp black sesame seeds
1 stick lemongrass
Ice cream
5 dl full cream
100 g cane sugar

How it's done

Sesame seeds

Without adding any oil, toast the sesame seeds in a non-stick frying pan for approx. 2 mins. Blitz the sesame seeds and lemongrass in a food processor.

Ice cream

Bring the cream, cane sugar, sesame seeds and lemongrass to the boil, simmer for approx. 5 mins. Remove the pan from the heat, leave to infuse for approx. 1.5 hrs. Pass the mixture through a sieve into a stainless steel bowl, freeze for approx. 10 hrs., stirring 2-3 times.
