Gazpacho with mozzarella balls

Ingredients

for 4 person

Gazpacho
200 g tomatoes, in pieces
cucumber (approx. 400g), in pieces
red pepper, in pieces
yellow pepper, in pieces
onion, in pieces
garlic clove, halved
100 g bread, in pieces
3 dl vegetable bouillon, cold
2 tbsp tomato puree
2 tbsp olive oil
1 ½ tsp salt
a little  pepper
Mozzarella balls & serving
120 g mozzarella pearl, drained
1 tbsp basil, finely chopped
1 tbsp olive oil

How it's done

Gazpacho

Puree the tomatoes with all the other ingredients. Cover the gazpacho and leave to chill for approx. 1 hr.

Mozzarella balls & serving

Mix the mozzarella balls with the basil. Serve the gazpacho, top with the mozzarella balls and drizzle with a little oil.
