Gazpacho with mozzarella balls
Ingredients
for 4 person
| 200 g | tomatoes, in pieces |
| 1 | cucumber (approx. 400g), in pieces |
| 1 | red pepper, in pieces |
| 1 | yellow pepper, in pieces |
| 1 | onion, in pieces |
| 1 | garlic clove, halved |
| 100 g | bread, in pieces |
| 3 dl | vegetable bouillon, cold |
| 2 tbsp | tomato puree |
| 2 tbsp | olive oil |
| 1 ½ tsp | salt |
| a little | pepper |
| 120 g | mozzarella pearl, drained |
| 1 tbsp | basil, finely chopped |
| 1 tbsp | olive oil |
How it's done
Gazpacho
Puree the tomatoes with all the other ingredients. Cover the gazpacho and leave to chill for approx. 1 hr.
Mozzarella balls & serving
Mix the mozzarella balls with the basil. Serve the gazpacho, top with the mozzarella balls and drizzle with a little oil.
