Lemon aioli
Ingredients
for 4 person
| 1 | garlic, unpeeled |
| 1 | fresh egg yolk |
| 1 tsp | mustard |
| 1 tsp | white balsamic vinegar |
| 1 | organic lemon, use grated zest and 1 tsp of juice |
| 1 dl | sunflower oil, not cold pressed |
| salt and pepper to taste |
How it's done
Grill the garlic
Charcoal/gas/electric barbecue: Cover and grill the garlic over/on a medium heat (approx. 200 °C for approx. 30 mins. Allow the garlic to cool a little, peel and mash with a fork.
Aioli
Place the egg yolk, mustard, balsamic, lemon zest, lemon juice and garlic in a measuring cup, puree. Add the oil drop by drop to begin with, then gradually more, stirring constantly to form a thick mayonnaise, season.
