Grilled pineapple with vanilla ice cream

Ingredients

for 4 person

Marinade
2 tbsp liquid honey
1 tbsp brown rum (e.g. Bacardi Oakheart Spiced Rum)
Grill the ananas
pineapple, peeled and cut into slices approx. 1 cm thick
2 pinch sea salt
Ice cream & garnish
125 ml vanilla ice cream
1 tbsp lemon balm, finely chopped

Marinade

Mix the honey and rum.

Grill the ananas

Charcoal/gas/electric grill: Cover and grill the pineapple over/on a medium heat (approx. 220 °C for approx. 2 mins. on each side, coating the pineapple in the honey & rum marinade. Allow the pineapple to cool a little, sprinkle with fleur de sel.

Ice cream & garnish

Shape the ice cream into 4 balls, serve with the pineapple and sprinkle with lemon balm.
