Chocolate ice cream sandwich
Ingredients
for 4 pieces
| 100 g | chocolate ice cream, slightly defrosted |
| 2 tbsp | unsalted, shelled pistachios, coarsely chopped |
| 8 | biscuits (e.g. chocolate cookies) |
| 1 bag | dark cake icing (approx. 125 g, melted |
| 1 tbsp | unsalted, shelled pistachios, coarsely chopped |
How it's done
Ice cream sandwiches
Mix the ice cream with the pistachios. Spoon approx. 2 tbsp of ice cream onto 4 separate biscuits, top with the remaining biscuits. Freeze the biscuit sandwiches for approx. 30 mins.
Chocolate glaze
Dip the ice cream sandwiches halfway into the glaze, sprinkle with pistachios, dry for approx. 2 mins. on a rack. Freeze for a further 30 mins.
