Antipasti alla griglia
Ingredients
for 8 portions
| 1 dl | olive oil |
| 1 | organic lemon, grated zest and the juice |
| 1 tsp | salt |
| a little | pepper |
| 1 | spring onion incl. green part, green part cut into rings, onions halved lengthwise, set aside |
| 1 | aubergine, cut lengthwise into slices approx. 5 mm thick |
| 1 | red pepper, cut into eighths |
| 1 | yellow pepper, cut into eighths |
| 1 | courgette, cut lengthwise into slices approx. 5 mm thick |
| 2 | king oyster mushrooms, cut lengthways into slices approx. 1 cm thick |
| 2 tbsp | olive oil |
How it's done
Marinade
In a wide dish, combine the oil with all the other ingredients up to and including the salt, mix well. Add the spring onion greens, set aside.
To grill
Mix the aubergines and all the other ingredients with the reserved onions.
Charcoal/gas/electric grill: Grill the vegetables in batches over/on a medium heat (approx. 200 °C for approx. 7 mins. on each side. Place in the marinade, marinate until ready to serve.
