Cola chilli ribs
Ingredients
for 4 person
| 2 dl | Coca Cola |
| 2 tbsp | soy sauce |
| 2 tbsp | ketchup |
| 2 tbsp | honey |
| 1 tsp | sambal oelek |
| 1 tsp | salt |
| 2 | rack of pork spare ribs |
| 4 | green apples, thinly sliced |
| 20 g | garden cress |
| 1 ½ tbsp | olive oil |
| 1 tbsp | lemon juice |
| 2 pinch | salt |
| a little | pepper |
How it's done
Marinade
Boil the Coca Cola in a large pan without stirring. Turn down the heat and reduce to approx. 3 tbsp. Add the soy sauce and all the other ingredients up to and including the salt, simmer for approx. 15 mins., leave to cool.
To marinate
Brush the spare ribs with 3/4 of the marinade, cover and allow to marinate for approx. 1 hr. Set aside the remainder of the marinade. Place each spare rib on a sheet of foil. Fold the foil to form a parcel.
To grill the peaches
Remove from the grill, remove the foil, brush with the reserved marinade. Grill the spare ribs over/on a medium heat (approx. 200 °C for approx. 7 mins. on each side.
Apple salad
Place the apple slices in a bowl, add the remaining ingredients and mix well. Serve with the spare ribs.
