Aubergine sandwiches with cottage cheese
Ingredients
for 4 person
200 g | plain cottage cheese, rinsed, drained |
50 g | dried tomatoes, finely chopped |
2 tbsp | basil, finely chopped |
to taste | salt |
to taste | pepper |
2 | aubergines, cut into slices 1 cm thick |
2 tbsp | olive oil |
½ tsp | salt |
a little | pepper |
How it's done
Cottage cheese filling
Mix the cottage cheese, tomatoes and basil in a bowl, season.
Aubergines
Brush both sides of the aubergine slices with oil. Place the aubergine on a hot griddle and fry in batches on both sides for approx. 7 mins., season. Top half of the aubergine slices with 1 tbsp each of the cottage cheese, cover with the remaining aubergine slices.
