French toast pieces with blackberries
Ingredients
for 4 person
| 400 g | blackberries |
| 1 parcel | vanilla sugar |
| 2 tbsp | clarified butter |
| 300 g | toast bread, sliced, cut into quarters |
| 40 g | hazelnuts, coarsely chopped |
| 1 ½ dl | single cream |
| 3 | fresh eggs |
| 2 tbsp | sugar |
| icing sugar to dust |
How it's done
Fruit
Combine the blackberries and vanilla sugar.
To fry
Heat the clarified butter in a non-stick frying pan. Fry the bread and nuts for approx. 5 mins. until golden brown, then mix in the blackberries.
Egg mixture
Combine the cream, eggs and sugar, pour into the pan. Reduce the heat, use a spatula to keep moving the mixture and cook for approx. 5 mins. until the egg mixture solidifies. Dust with icing sugar.
