Meatballs with sesame seeds and chickpeas
Ingredients
for 4 person
1 tin | chickpeas (approx. 410 g), rinsed, drained |
1 tin | chopped tomatoes (approx. 400 g) |
½ tsp | salt |
a little | pepper |
500 g | minced meat (beef) |
1 | onion, finely chopped |
1 | garlic clove, finely chopped |
½ bunch | flat-leaf parsley, finely chopped |
1 | organic lemon, use just half of grated zest |
3 tbsp | breadcrumbs |
1 ¼ tsp | salt |
a little | pepper |
3 tbsp | sesame seeds |
clarified butter, for frying |
How it's done
Chickpeas
Combine the chickpeas and tomatoes in a pan, bring to the boil, cover and simmer for approx. 10 mins., season.
Meatballs
Place the meat in a bowl. Add the onion, garlic, parsley, lemon zest and breadcrumbs, season. Knead well by hand. With wet hands, shape the mixture into approx. 20 balls, toss the balls in the sesame seeds.
Heat the clarified butter in a frying pan. Fry the meatballs on all sides for approx. 8 mins. Serve with the chickpeas.
