Salmon with cucumber

Ingredients

for 4 person

Fish
600 g salmon fillet without skin, cut into approx. 3 cm chunks
½ tsp salt
a little  pepper
2 tbsp white flour
  oil for frying
Cucumbers and tomatoes
30 g butter
cucumbers halved, deseeded, cut into 2 cm cubes
250 g cherry tomato, halved
½ tsp salt
a little  pepper
2 tbsp chives, finely chopped

How it's done

Fish

Season the salmon and toss in the flour. Heat the oil in a non-stick frying pan. Reduce the heat, fry the salmon in batches for approx. 2 mins. on each side, remove from the pan, keep warm.

Cucumbers and tomatoes

Heat the butter in the same pan. Sauté the cucumbers for approx. 5 mins. Mix in the tomatoes, season, serve with the fish. Sprinkle with chives.
