Baked sweet potatoes with feta

Ingredients

for 2 person

sweet potatoes (approx. 250 g each)
90 g feta (CNp)
½ bunch coriander
½ tsp sea salt
a little  pepper
½ parcel pomegranate seeds (approx. 70 g)

How it's done

Prick the sweet potatoes several times with a fork, place on a baking tray lined with baking paper.

Bake for approx. 40 mins. in the centre of an oven preheated to 200°C.

Cut the feta into cubes, pick the coriander leaves. Cut the sweet potatoes in half lengthwise, place them on the plates with the cut sides facing up, season. Sprinkle the feta, pomegranate seeds and coriander over the top, serve immediately.
