Warm sweet potato & curly kale salad
Ingredients
for 2 person
1 tbsp | olive oil |
500 g | sweet potatoes, cut into approx. 1 cm cubes |
½ tsp | salt |
a little | pepper |
200 g | Betty Bossi Federkohl-Mix |
1 | lemon, use only the juice |
2 tbsp | olive oil |
salt and pepper to taste | |
2 tbsp | Karma Mandelmus weiss |
How it's done
Vegetables
Heat the oil, cook the sweet potatoes for approx. 10 mins. Add the curly kale, continue cooking for approx. 5 mins., season.
Dressing
Combine the lemon juice with the oil and the almond cream, season. Add the warm vegetables and mix well.
