Warm sweet potato & curly kale salad

Ingredients

for 2 person

Vegetables
1 tbsp olive oil
500 g sweet potatoes, cut into approx. 1 cm cubes
½ tsp salt
a little  pepper
200 g Betty Bossi Federkohl-Mix
Dressing
lemon, use only the juice
2 tbsp olive oil
  salt and pepper to taste
2 tbsp Karma Mandelmus weiss

How it's done

Vegetables

Heat the oil, cook the sweet potatoes for approx. 10 mins. Add the curly kale, continue cooking for approx. 5 mins., season.

Dressing

Combine the lemon juice with the oil and the almond cream, season. Add the warm vegetables and mix well.
