Ingredients

Granita
3 dl blood orange juice
star anise
70 g cane sugar
Orange salad
oranges
1 tsp sugar
1 tbsp lemon juice

How it's done

Granita

Bring the orange juice, star anise and sugar to the boil, reduce the heat, simmer for approx. 2 mins., allow to cool, remove the star anise.

To freeze, pour the mixture into a wide-bottomed container. Freeze for approx. 4 hrs., scrape the mixture from time to time with a fork until frozen.

Orange salad

Slice off the top and bottom of the oranges, then peel all round the fruit down to the flesh. Using a sharp knife, cut out the segments between the white membranes. Halve the segments crosswise, mix together in a bowl with the sugar and lemon juice, cover and leave to steep for approx. 1 hr.

Serve the orange salad and granita together.
