Prawns with chilli oil

Ingredients

for 4 person

Chilli oil
1 dl olive oil
garlic clove, finely chopped
red pepper, diced
organic lemon, use grated zest only
1 tbsp rosemary, finely chopped
¼ tsp salt
200 g red lentils
  water, boiling
1 tbsp olive oil
onion, finely chopped
1 tbsp white wine vinegar
½ tsp salt
1 tbsp olive oil
½ tsp salt

How it's done

Chilli oil

Mix the oil and remaining ingredients up to and including salt, set aside.

Boil the lentils in water for approx. 5 mins., drain. Heat the oil in the same pan, sauté the onion, add the lentils and continue to sauté for approx. 3 mins., add the vinegar, salt to taste and divide onto plates.

Heat the oil in a frying pan, salt the prawns and fry in batches for approx. 3 mins. Arrange the prawns on top of the lentils, drizzle with chilli oil.
