Preserved berries

Ingredients

for 4 glasses

3 dl apple juice
80 g sugar
vanilla pod, cut open lengthwise, seeds scraped out
250 g raspberries
250 g blueberries

How it's done

For the canning liquid, bring all the ingredients up to and including vanilla seeds to a boil, reduce the heat, and simmer for approx. 3 mins. Add the berries and allow to stand for approx. 1 min. Using a slotted spoon, fill the clean, warmed jars with the berries while they are still hot. Bring the liquid to the boil again and pour it into the jars until it covers the berries. Seal the jars immediately and let them cool on a cloth.
