Pho Bo beef and noodle soup
Ingredients
for 2 person
| 1 | onion, cut into quarters |
| 1 cm | ginger, in slices |
| 8 dl | Fine Food Bouillon de boeuf |
| 1 tbsp | fish sauce |
| 1 | star anise |
| ½ | cinnamon stick |
| 100 g | rice noodles |
| 150 g | beef tenderloin, cut into strips |
| 1 | spring onion incl. green part, cut into thin rings |
| 1 | lime, rinsed with hot water, dabbed dry, cut into wedges |
| 50 g | bean sprouts |
| 2 tbsp | coriander leaves |
How it's done
Stock
Cook the onion and all the ingredients up to and including the cinnamon over a medium heat for approx. 30 mins. Strain the stock, return to the pan and bring to the boil.
Ingredients
Prepare the noodles according to the packet instructions, drain and divide with the beef into 2 large soup bowls. Pour over the hot stock and leave to infuse for approx. 1 min. Add the spring onion, lime and bean sprouts, serve with coriander.
