Kale, quinoa and avocado salad
Ingredients
for 4 person
5 dl | vegetable bouillon |
200 g | quinoa |
180 g | feta, cut into approx. 1 cm cubes |
1 | avocado, cut into cubes |
50 g | kale, cut into strips approx. 2 cm wide |
2 tbsp | Fine Food Aceto balsamico di Modena |
6 tbsp | Fine Food Extra Virgin Olive Oil with Lemon |
2 tbsp | dried cranberries |
4 tbsp | pomegranate seeds |
a little | Fine Food Messolongi Fleur de Sel |
a little | pepper |
How it's done
Quinoa
Bring the stock to the boil with the quinoa, simmer over a low heat for approx. 15 mins. until almost soft, allow to cool.
Salad
Add the feta and all the ingredients up to and including the pomegranate seeds to the quinoa, season.
