Aubergine

1 tbsp toasted sesame oil
1 aubergine, diced
1 tbsp ginger, finely chopped
1 dl water
2 tbsp hoisin sauce
1 tbsp soy sauce
½ tsp sugar

How it's done

Aubergine

Heat the oil in a non-stick frying pan, stir fry the aubergine and ginger for approx. 10 mins. Add the water, Hoisin sauce, soy sauce and sugar, simmer for approx. 10 mins.

Good to know
Serve with: Jasmine rice.
Tip: Roughly chop the garlic chives, sprinkle on top. Substitute Wok sauce for hoisin sauce.
