Noodles

200g pasta (e.g. noodles)
salted water, boiling
250g squash (e.g. Muscade), grated with a rösti grater
1 boiled beet, grated with a rösti grater
80g diced bacon
1tbsp oil

Sauce

2dl cream
2 eggs
50g grated Gruyère
½tsp salt
½tsp paprika

12-hole muffin tin (each hole approx. 7 cm in diameter), greased

How it's done

Noodles

Cook the noodles in salted water for approx. 1½ mins., rinsed in cold water, drained. Mix the noodles, squash, beetroot, diced bacon and oil, place in the prepared holes.

Sauce

Whisk together the cream, eggs and cheese, season. Pour over the noodle nests.

To bake

Approx. 25 mins. in the centre of an oven preheated to 180°C.
