2tbsp olive oil
1tbsp white wine vinegar
0.25tsp salt
a little pepper
250g Betty Bossi Taboulé Salat mit Poulet
90g rocket

ham crisps

0.5tbsp olive oil
2 apricots, thinly sliced
80g cured ham, cut into chunks

How it's done

Tabbouleh salad

Mix the oil and vinegar in a bowl, season. Add the tabbouleh salad and rocket, mix.

ham crisps

Heat the oil in a non-stick frying pan, fry the apricots for approx. 2 mins., add to the salad. Fry the cured ham in the same pan for approx. 4 mins. until crispy, drain on paper towels, scatter over the salad.
