How it's done
Mix the oil and vinegar in a bowl, season. Add the tabbouleh salad and rocket, mix.
Heat the oil in a non-stick frying pan, fry the apricots for approx. 2 mins., add to the salad. Fry the cured ham in the same pan for approx. 4 mins. until crispy, drain on paper towels, scatter over the salad.
