1 lemon, use a little grated zest and 1 tsp of juice
50 g black olives, finely chopped
1 tbsp capers, finely chopped
2 anchovy fillets, finely chopped
1 bunch flat-leaf parsley, finely chopped
salt, to taste
pepper, to taste
