Lauren beschloss bereits während ihres Kunststudiums, Veganerin zu werden. Dieser Entscheid löste eine kreative Explosion in ihrer Küche aus und sie machte ihre Leidenschaft zum Beruf: 2010 eröffnete sie mit der «vegan kitchen and Bakery» das erste vegane Restaurant in der Schweiz. Der Blog «vegan kitchen» war die Türe zur digitalen Welt, wo Lauren bis heute vegane Neuigkeiten postet.
Der Blog «vegan kitchen» geht über den Tellerrand hinaus. Nicht nur das Essen steht im Vordergrund, sondern der Veganismus mit all seinen Facetten: von Lifestyle-Themen über aktivistische Beiträge bis hin zu Kunst.
Was sind deine Inspirationsquellen?
Die Netflixserie «Chefs Table» hat meine Fantasie sicher beflügelt und mir gezeigt, dass noch vieles möglich wäre in der veganen Küche. Ich sehe einen kilometerlangen Esstisch vor mir mit neuen Kreationen.
Wie und wo sammelst du deine Lieblingsrezepte?
Ich habe ein Sammelsurium von über 40 veganen Kochbüchern, darunter sind bereits einige Lieblingsrezepte und andere wollen noch entdeckt werden.

Generell empfinde ich Dosenfutter als kulinarischen Tiefpunkt.
Seit der Erfindung von Aquafabe ist es jedoch toll, eine Dose abgekochte Kichererbsen zu Hause zu haben.

Vegane Lasagne in allen Spielarten: Von meiner bekannten Raw Lasagne bis zur gebackenen Variante und von herzhaft bis zu süss habe ich in letzter Zeit alles ausprobiert.

Hafermilch und Bio-Gemüse aus der Schweiz.

Der Vitamix Pro 750.
Dein «Happy Soul Food»?
Eine Green Smoothie Bowl aus Palmkohl, Birnen, frischer Minze und Vanille, dekoriert mit essbaren Wildblüten.
Ein warmes Frühstück ist meine wichtigste Mahlzeit. Täglich mache ich ein anderes Porridge für die ganze Familie.
