LAUREN - Food Photography Academy

In summer, the blogger likes nothing better than ice-cold watermelon.

LAUREN - Food Photography Academy

Ever since childhood, Lauren knew she wanted to work in the food industry in some way. After starting a food blog in 2015, she quickly fell in love with food photography, and has been working as a food photographer ever since. Now she runs the educational food photography site, Food Photography site, Food Photography Academy, to teach other food photographers and bloggers everything she knows.

Black lentil chili is one of Lauren's classic dishes.

Food photography and vegan cuisine are Lauren’s great passions. If you’re looking for easy, delicious vegan meals, you’ll find plenty of inspiration in Lauren’s recipes.

Do you have a "secret ingredient" that gives your dishes that special edge?

I recently discovered just how versatile miso paste can be. Besides being an excellent base for noodle broth it can also be used in salad dressings!

Which fragrance evokes positive memories for you?

Bread fresh from the oven reminds me of many a childhood trip to France. Hopping on the Eurostar and travelling the 35 minutes through the Tunnel to Calais, spending a wonderful day in France and then returning home in the evening with fresh French bread in my backpack – these are some of my favourite childhood memories.

What food can't you stand?

I can't stand nori. It's a shame because I've been wanting to make vegetarian sushi for a while. If only it didn't involve nori!

What's the most important seasoning in your kitchen – aside from salt and pepper?

Smoked paprika! It's incredibly versatile and I use it in everything from roasted vegetables to potato wedges.

How do your culinary creations start?

When I'm developing a recipe, I usually begin with one key ingredient and build the recipe around it. I have a book called"The Flavor Bible". It contains a huge repertoire of flavour pairings. I take my seasonal ingredient and use this book to find a couple of matching flavours. Then I think about what kind of dish I want to cook. Pasta? Or risotto? It's a great opportunity for me to get creative with seasonal ingredients.

Which kitchen utensil could you not do without?

My garlic press – I can't live without it!

Plus brightly coloured Swiss chard and other similar ingredients ensure that my recipes are visually stunning.
